For this two-day event at Raymond, I wanted to transport guests on a culinary journey to South America. The aim was to craft a menu that celebrates the bold, vibrant flavors characteristic of this diverse region, while maintaining the refined presentation expected in a fine dining setting. The menu was carefully curated to offer a mix of traditional and modern South American dishes, each thoughtfully prepared to highlight the authenticity and rich culinary heritage of the continent.
1. Appetizer: Empanadas
A classic South American favorite, these empanadas were filled with a savory blend of seasoned beef, onions, and spices, all encased in a perfectly flaky pastry. Served with a zesty chimichurri dipping sauce, this dish set the tone for the evening with its warm, comforting flavors and inviting presentation.
2. Starter: Gazpacho Soup
A refreshing chilled tomato and vegetable soup, ideal for starting the evening. The gazpacho was made using fresh, ripe tomatoes, cucumbers, bell peppers, and a hint of garlic, blended to a smooth consistency.
